Walnut Raisin Spice Cake

Ingredients

- 1 cup of raisins
- 1 cup of chopped walnuts
- 1 teaspoon of baking soda
- 1 cup of boiling water

Other Ingredients:
- 1.5 cups of flour
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/2 teaspoon of allspice
- 1/2 teaspoon of ground cloves
- 1/2 cup of butter
- 1 cup of sugar
- 1 egg
- 2 egg yolks
- 1 teaspoon of lemon juice
- 1 teaspoon of vanilla

Instructions

Mix the nuts, raisins, baking soda and boiling water. Sir everything together and let the mixture cool

Sift the flour then mix the salt and spices into it.

In a large bowl, cream the butter and sugar together until smooth. Beat in the eggs, lemon juice and vanilla.

Gradually beat in the dry flour mixture and the wet raisin mixture.

Pour into a greased and floured 13 inch baking pan and bake at 350 degrees for 45 minutes (some similar recipes say 25 to 30 minutes). Cool the cake on a rack before frosting the top.
