Carrot Pineapple Cake

Ingredients

Cake Ingredients
- 1 can (8 ounces) of unsweetened crushed pineapple
- 2 cups of shredded carrots
- 4 whole eggs
- 1 cup of granulated sugar
- 1 cup of brown sugar, packed
- 1 cup of vegetable oil
- 2 cups of all-purpose flour
- 2 teaspoons of baking soda
- 2 teaspoons of ground cinnamon
- 1/4 teaspoon of salt
- 3/4 cup of chopped walnuts

Instructions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch by 13 inch inch cake pan. Mix flour, baking soda, baking powder, salt and cinnamon. Make a well in the center and add sugar, oil, eggs and vanilla. Mix with wooden spoon until smooth. Stir in carrots, coconut, walnuts and pineapple. Pour into the greased and flowered 13 inch inch pan. Bake at 350 degrees for about 45 minutes, or until a toothpick inserted in the center comes out clean. (it's normal for the center to sink a little). Cool the cake to room temperature before frosting.
