TACO FILLING:
- 1 cup of cooked black beans
- 1/2 cup of whole kernal corn
- 1 small tomato, diced
- 1/2 of a small avocado, diced
- 2 tablespoons of chopped fresh cilantro
- 1 tablespoon of fresh lemon juice
- 1/2 teaspoon of chili powder
OTHER INGREDIENTS
- 8 lettuce leaves
- 1/2 cup of shredded jack cheese
- 1/2 cup of salsa
Make the taco filling by mixing together the beans, corn, diced tomato, diced avocado, cilantro, lemon juice, and chili powder.
Spoon 1/4 cup of the taco filling into each lettuce leaf and top with 1/8 of the the cheese and 1/8 of the salsa.
Fold the lettuce leaves to resemble tacos. Makes 8 tacos.
