Sunomo (Japanese Cucumber Salad)

An online recipe with instructions for making Japanese cucumber salad known as Sunomono.

Ingredients

- 1 large cucumber
- 3/4 teaspoon of salt
- 3/4 cup of cider vinegar
- 1/2 cup of sugar

Optional Garnish Ingredients:
- lettuce leaves
- tomato slices
- crab meat, cooked (optional)
- shrimp, cooked (optional)

Instructions

Lightly peel and thinly slice the cucumbers.

Sprinkle them with the salt and allow them to stand at room temperature for one hour.

Gently squeeze the cucumber slices until they are soft and pliable.

Mix the vinegar and sugar in a dsmall bowl and stir until the sugar dissolves.

Add about half the vinegar mixture to the cucumbers and toss lightly

Just before serving, pour the remaining vinegar ove the cucumbers.

Divide the salad among small bowls or plates lined with lettuce leaves.

Optional: Garnish with the tomatoes, crab and shrimp.
