- 8 to 12 slices of day old bread
- oil for deep frying
- 3/4 pound of shrimp
- 1/2 cup of water chestnuts, minced
- 3 green onions, sliced
- 2 tablespoons of minced ginger root
- 1 tablespoon of cornstarch
- 1/2 teaspoon of salt
- 1/4 teaspoon of white pepper
- dash of garlic powder
- 1 egg, beaten
Puree the shrimp in a blender and mix with the water chestnuts, onion, ginger, cornstarch, salt, pepper garlic powder and beaten egg.
Chill the shrimp mixture
- cut the crusts off the bread slices
- spread the shrimp mixture on the bread slices
- cut each bread slice into 4 triangles
- Heat oil one inch deep to 325 degrees.
- deep fry the shrimp triangles shrimp side down about 3 minutes
- turn and cook on the other side about 2 minutes.
- drain and serve immediately
