Salad Ingredients:
- 1/4 cup green bell pepper, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup yellow bell pepper, diced
- 1/4 cup red cabbage, diced
- 2 tablespoons of green onion, sliced
Dressing Ingredients
- 1/8 teaspoon crushed basil
- 1/8 teaspoon minced garlic
- 1 tablespoon of white wine vinegar
- 1/2 teaspoon of olive oil
Mix all of the salad and dressing ingredients in a bowl and chill 1 to 3 hours before serving. This recipe makes about 1 cup of salad, enough for 1 or 2 people.
Serving suggestions:
(1) Serve on a lettuce leaf on a plate or in a bowl
(2) Serve iside a hollowed out tomato,
(3) Serve inside a hollowed out bell pepper with a small slice cut off the bottom to keep it from tipping.
