Recipe Name: Peanut Butter Balls
Description: no-cook peanut butter and coconut balls dipped in chocolate
- 1 cup of soft butter
- 2 cups of crushed vanilla wafers (~ one 12 ounce package)
- 1 teaspoon of vanilla
- 1 cup of finely grated coconut
- 1 (1 pound) box of powdered sugar (confectioner's sugar)
- 1 cup of chunky-style peanut butter
- 1 (12 ounce) package of chocolate chops
- 1/4 cake of paraffin (in original recipe but optional) *
Candy Ball Instructions:
Beat the butter in a large bowl until it is creamy.
Add the crumbs, vanila, coconut, and sugar and mix thoroughly.
Mix in the peanut butter with a wooden spoon.
Shape into balls one inch in diameter.
Place them on a cookie sheet and place in the freezer for
15 minutes (use a timer).
Chocolate Topping Instructions:
Melt the chocolate pieces (with the paraffin if you are
using it *) in a double boiler. Remove the balls from the freezer.
Insert a toothpick into each ball and swirl in the chocolate
to coat only the half the ball. Place on wax paper while the
chocolate hardens. Store in the refrigerator or freezer
* What is Paraffin?
Paraffin is an edible wax that is often added to chocolate candy
to give it a glossy finish and help it remain solid at room
temperature. Paraffin can be left out of this recipe but without
it the chocolate will not be as glossy and it will soften more
quickly at room temperature.
