- 2 onions, chopped
- 3 stalks of celery chopped
- 2 carrots, chopped
- 2 tablespoons of bacon drippings
- 3 quarts of ham stock or water
- ham bones or ham scraps
- 1 pound of lentils
- salt to taste
- pepper to taste
Saute onions, celery and carrots in the bacon drippings until tender. Add the remaining ingredients and cook until lentils are tender, typicaly about 1.5 hours.
