Shortbread Crust Ingredients:
- 1 cup of flour
- 1/2 cup of butter
- 1/4 cup pf powdered sugar
Lemon Filling Ingredients:
- 2 eggs
- 1 cup of sugar
- 2 tablespoons of flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 2 tablespoons of lemon juice
- 1 tablespoon of grated lemon peel

Preheat the oven to 350 degrees F.
Blend the flour, butter and powdered sugar together thoroughly. Press evenly into an 8 inch square pan. Bake at 360 degrees for 15 to 20 minutes or until light brown.
Beat the filling ingredients together until light and fluffy. Pour them over the hot crust. Bake another 25 5o 30 minutes or until no imprint remains when lightly touched.
Cool completely then frost with Lemon Glaze.
