- 1 tablespoon of olive oil
- 3 cloves of garlic, minced
- 1/2 onion, sliced
- 1 red bell pepper, sliced
- 1/2 pound of mushrooms, sliced
- 1/4 teaspoon of oregano
- Salt and pepper to taste
- 1 pound of zucchini, sliced or in chunks
Heat the oil in a skillet and saute the onions, garlic, red bell pepper until the peppers are crisp tender. Remove the vegetables from the pan. Add the cut up zucchini and the oregano to the pan and stir fry for about 2 minutes. Add two tablespoons of water, cover, and cook about 10 or 15 minutes or until the zucchini is crisp-tender. Add the cooked peppers and other vegetables to the zucchini and season to taste with salt and pepper.
