- 1 (3-1/4 ounce) package of vanilla pudding mix (not instant)
- 2 cups of prepared eggnog
- 1 cup of milk
- 1 tablespoon of butter
- 1 tablespoon of dark rum
- nugmeg
FOR NESSLERODE PUDDING ADD:
- Candied fruit, chopped (optional)
Combine the pudding mix, eggnog, and milk. Microwave unocvered on high for 8 to 10 minutes or until thick and boiling, beating several times during the cooking with a wire whisk. Stir in the butter and cool, uncovered, about 10 minutes, whisking 2 or 3 times during the cooling period. Stir in the rum and nutmeg. Cool the pudding and refrigerate.
NESSLERODE PUDDING VARIATION: Soak the fruit in the rum for at least one hour. Follow the basic recipe except instead of stirring in the rum and nutmet as a last step, you stir in the rum, fruit, and nutmeg.
CANDIED FRUIT TOPPING VARIATION: Top the pudding with whipped cream and chopped candied fruit.
BANANA VARIATION: Layer the pudding in a dish with bananas.
AMBROSIA VARIATION: Spoon the pudding over orange and coconut ambrosia.
