- 1 (15.25 ounce) can of fruit cocktail - 1 cup of flour - 1/2 cup of sugar - 1/4 teaspoon of salt - 1/2 teaspoon of baking soda - 2 eggs - 1/2 cup of chopped walnuts - 1/4 cup of brown sugar, firmly packed
Preheat the oven to 350 degrees F.
Grease and flour a 9 inch square cake pan.
Sift the flour with the sugar, salt, and baking soda.
In a separate bowl, beat the egg until thick and lemon colored.
Add the undrained fruit cocktail and mix thoroughly.
Pour cake batter into the greased and floured 9 inch pan.
Combine nuts and brown sugar and sprinkle over the batter.
Bake 25 to 30 minutes or until a toothpick inserted in the center has no batter on it.
Can be served cold or warm with a scoop of vanilla ice cream.
