- 8 chicken breast halves
- 1/4 cup of flour
- 1/4 cup of butter
- 1/4 teaspoon of salt
- 1/3 teaspoon of lemon pepper
- 1 cup of chicken broth
- 1/2 cup of heavy cream
- 2 tablespoons of water
- 1 tablespoon of lemon juice
- parsley for garnish
- lemon slices for garnish
- hot steamed rice
- Pound the chicken breasts until they are flat
- Coat the chicken breasts with the 1/4 cup of flour
- Brown them in 2 tablespoons of the butter
- Arrange the browned chicken breasts in a cake pan
- Heat the remaining butter in a skillet or saucepan
- Add the salt, pepper, chicken broth and cream.
- Pour that liquid over the chicken breasts
- Optional: may be frozen at this point
Bake the Chicken at 350 degrees F
- bake about one hour if frozen
- bake about 40 minutes if not frozen
- Remove the chicken from the pan
- Mix 2 tablespoons of flour with 2 tablespoons of water
- Stir the flour and water mixture into the chicken liquid
- Cook until thick (typically about 2 minutes)
- Stir in the lemon juice
- Pour the sauce over the chicken
- Serve over hot steamed rice
- Garnish with lemon slices and parsley
