- 1 1/2 cups graham wafer crumbs
- 1/2 cup of brown sugar
- 1/2 cup of butter
- 1 (3 ounce) package of LEMON Jell-O
- 1 (3 ounce) package of LIME Jell-O
- 1 (3 ounce) package of STRAWBERRY or RASPBERRY Jell-O
- 1 envelope of Knox of UNFLAVORED gelatin
- 1 cup of pineapple juice
- 2 envelopes of Dream Whip
- 1 cup of crushed pineapple (OPTIONAL)
CRUST: Preheat oven to 350 degrees. Melt butter, stir in crumbs and brown sugar, and press into the bottom of an ungreased spring form pan. If you don't have a spring form pan you can use an ungreased 9 inch by 13 inch pan. Bake at 350 degrees for 10 minutes. Allow to cool before filling.
JELLO CUBES Prepare the three packages of flavored Jello as directed on package, except use only 1 cup of water instead of 2 cups, so the Jello will be firm enough to cut into solid cubes. Pour each Jello flavor into a separate 8 inch square pan and chill until firm.
ASSEMBLE: Dissolve one package of plain Gelatin in 1/4 cup of cup cold water. Heat the pineapple juice and add it to the to dissolved unflavored gelatin. Cool until it is beginning to thicken, but is still the texture of syrup. You will need to watch it carefully to make sure you catch it before it sets. Whip together 2 packages of Dream Whip according to the directions on the package. Fold it into the pineapple mixture. Cut Jello into cubes and add them to the Dream Whip mixture along with the crushed pineapple (if you are using it). Gently mix everything together, taking care not to break any of the Jello cubes. Chill until set. Cut into squares or wedges to serve, so the colorful gelatin cubes are displayed.
