- 1/4 pound of bacon + slices for garnish
- 4 (1 pound, 3 ounce) cans of baked beans
- 2 teaspoons of dry mustard
- 1/4 teaspoon of ground ginger
- 1/4 cup of coffee
- 1/2 cup of brown sugar
- 1/4 cup of rum or bourbon
- 1 (8.25 ounce) can of sliced pineapple, drained
- dice the 1/4 pound of bacon
- fry the diced bacon until crisp
- fry whole slices of bacon (to be a garnish)
In a 3 casserole or oother baking dish, mix the beans, dry mustard, ground ginger, coffee, sugar and diced bacon.
Cover the casserole and bake in a 350 degree oven for one hour.
Remove from the oven and stir in the rum or bourbon.
Cut the pineapple slices in half and arrange on top of the beans along with the pre-cooked garnish bacon slices (garnish bacon slices can be left whole or cut in half or cut into large pieces)
Return to the 350 degree oven and bake another 30 minutes or until the top is browned.
