- 1 head of red cabbage, shredded
- 3 tablespoons of bacon drippings
- 1 large onion, chopped
- 2 medium apples, peeled, cored and chopped
- 1/2 cup of red wine vinegar or red wine
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 1 bay leaf
- 1/2 cup of current jelly
Saute the chopped onion in the bacon drippings
Add the cabbage and continue cooking until the cabbage begins to wilt, about 10 minutes
Add the chopped apple, vinegar, sugar, salt and bay leaf.
Cover the pan, lower the heat and simmer for two hours, stirring several times
Add the jelly and stir it in until it is melted and well blended.
Bring mixture to a boil, lower the heat and simmer 10 more minutesl.
